Winemaking Vinification takes place separately for each variety. After the careful sorting of the grapes both in the vineyard and in the winery, a pre-fermentative cryo-extraction of a few hours takes place and the grapes are lightly pressed to receive only the first juice. The temperature of the fermentation ranges from 16°–18° C and ends after a period of approximately 15 days.
Description
Light greenish yellow color. Fresh and lively aromatic character with dominant citrus aromas, pear aromas with pleasant acidity and a soft aftertaste of herbs and mineral notes from Roditis. It is an excellent choice for seafood, grilled fish and fried appetizers while accompanying salads and pasta. Its combination with lemonade stews of Greek cuisine is also delightful.
