Winemaking The grapes are harvested only when fully matured and the vinification starts straight away when they get into the cellar. First it comes the destalking, soft pressing, follows a fermentation – which is tumultuous and takes place at about 30°C – then it follows the maceration where the submerged-cap method is used.This consists in leaving the must in contact with the skins and pips which – according to the tradition – is for about six weeks. After racking, the ideal conditions for a perfect malolactic fermentation are created in the cellar.
Aging The wine matures in traditional big Slavonian oak barrels for 24 months and ages in the bottle before being sold. Barolo enjoys an extraordinary longevity.This process is the one employed to produce all our Barolo – from the Classic one to the crus.
Description
Garnet red color with brick orange shades which intensify as time goes by. Intense and complex perfume but delicate and ethereal at the same time; warm, full and dry palate. Its complexity is given by the persistence of the tannins.
