Winemaking Picked early in the morning, to keep the fruit as cool as possible. The fruit was carefully destemmed and saignee'd to concentrate flavors. Following a 20 day cold soak, the fruit was warmed to start fermentation. 10-15 day ferment with peak temperatures reaching 95+ degrees. The wine was then macerated for another 10-15 days to find the right balance of tannins and structure, before being pressed.
Aging After pressing, free-run juice and press fractions are combined into 30% new oak barrels and cellared for 16 months on the lees with monthly stirring.
When poured, the classic Coelho Vineyard nose of perfume emanates from the glass. Notes of mountain strawberry and black cherry mix with delicate aromas of dried herbs and savory elements. Hints of sandalwood further add the complexity of our benchmark Pinot Noir. The wine is layered with berry fruits and creates a wonderful texture that is round and seamless. The acidity is harmonized with supple tannins to give perfect balance along with a hint of earthiness on the finish.
