Winemaking clay soil with a good amount of limestone and balanced organic elements and nitrogen. Harvest is the end of August first week of September. Soft pressing and destemming from 10 up to 15 days.
Aging after malolactic fermentation, 3/4 months in stainless steel tank , and then 3/4 months in bottle.
Intense ruby red and purple hues. Scents of spices, licorice, pepper, and Mediterranean maquis. Freshness and sapidity followed by a lingering spiciness. Pairs well with pizza, pasta, and meat sauces.
